Our Favorite Trader Joe's Dinner Bowl: Easy to Make and Great for Meal Prep.

When I was learning how to cook, I was looking for a meal that was cheap and could be prepared in advance. In search of great, reasonably priced food that met my dietary restrictions, of course, I ended up at Trader Joe's. In college, I did not have a lot of time to spend cooking, so this recipe was a great way to get in a variety of nutrients in a relatively simple way. I have made this bowl in a variety of different ways and I hope you enjoy this recipe as much as I do!


Trader Joe's GF-Vegan Green Goddess Dressing Bowl


Ingredients

Serving Size: 2 people

Scale these proportions to the amount of meals you want to make


For this recipe you will need:

  • 2 tbsp olive oil

  • 1 cup white or brown rice

  • 2 cup water (proportions may vary based on type of rice so check the instructions on the package)

  • 1 cucumber, diced

  • 1/2 cup shiitake or white mushroom, sliced

  • 1 cup kale, chopped

  • 1 green bell pepper

  • 2 tbsp lemon juice

  • 1/3 cup Trader Joe's Green Goddess Dressing

  • season with salt, pepper, basil, thyme, oregano to taste

You can vary the vegetables based on what you have in your pantry/available to you. For extra protein consider adding chicken or steak. For vegan options, consider chickpeas or beans.


Preparation Instructions


  1. Prepare the rice. Use a rice cooker and follow the directions on the bag. For white rice you can use 1 cup for every 2 cups of water. If cooking on stovetop, bring water and rice to a boil. Then reduce to a simmer and cook, covered until the water has absorbed (15-25 min).

  2. Sauté the Vegetables While the rice is cooking, prepare the vegetables. Place the mushrooms in a pan with oil, salt and pepper. Sauté about 2-3 minutes.

  3. Add the Green Bell Pepper to the pan, continuing to sauté for another few minutes.

  4. Add the Kale last. This should take the shortest time, cook until wilted and remove the vegetables from the heat. Set aside.

  5. Remove the rice, fluff, and add olive oil, salt, and seasoning. Add the lemon juice and vegetables.

  6. Lastly, add the Trader Joe's Green Goddess Dressing to taste.

  7. Serve immediately warm for the freshest taste. Viola! There is your easy and quick college Green Goddess bowl. Enjoy!


This recipe should take between 30-45 minutes to prepare, including 10-15 minutes of prep time and 20-30 minutes of cook time. To store, leave the dressing aside. Quickly cool the rice and store in the fridge.
